Learning more about French Pastry and Bread-My visit to Caramel French Bakery and Pastry, Muscat

What does it really take to perfect a flawless chocolate éclair? A delicious baguette?To pipe dozens of macarons? To bake an amazing 'melt in the mouth' Opera cake? Questions like this have come to my mind frequently, and in order to find answers to all these and many more, I spent a delightful morning at the Caramel French Bakery in Muscat yesterday.

The first thing that hit me as I entered the bakery in Al Ghubra, was the delicious aroma that floated all around. It was a combination of bread, pastry, chocolate and cheese all rolled into one. Must confess, if I hadn't eaten breakfast before setting off, it would probably have had me salivating!

I was greeted by the very polite French manager Mr. Pacombe who gave me a short brief about the place and introduced me to Eloise Traboulsi, the owner of Caramel. Caramel opened its first boutique and kiosk in Muscat in January 2010.  The initiative of Eloise Traboulsi, a French citizen living in the Gulf for the past 7 years, was the driving force and today Caramel combines her passion for pastry and bakery into a very successful business model for aspiring youngsters.

I was informed that in order to make such exquisite creations possible and produce the very best of traditional French bakery and pastry products, Eloise has introduced top of the range equipment and the finest ingredients coupled with the long experience of Caramel’s professional team.One look as I entered the Bakery and Pastry sections and I knew that it was truly a labour of love combined with the highest standards of professionalism reflected in the cutting edge technology of the machines and equipment being used by them.

With their  motto,' Your satisfaction is our challenge' Caramel takes pride in sharing the fact that they cater to many Corporate and Private companies around.They have a standard menu for customers ready reference or their product range can be catered based on personal preferences as well.

It was only 10 am and the shop was already packed with goodies.
In addition to  breads, and regular pastries I found cronuts, a new addition.
The Cronut is a unique creation by Chef Dominique Ansel that many have 
described to be a croissant -doughnut hybrid.After its launch in May 2013, 
cronut pastry fans were created all over the world, making it the 
most virally talked about dessert item in history.

I was introduced to the team working at the bakery and just ten minutes 
later, I understood exactly why Caramel is such a success.
Simply put, they have the most dedicated team of professionals
and the bakery works 24 hours a day. Add to it
smiling faces and effortless ease at their job and
there you have it!

I really could have spent a lot of time there 
but since I had other things planned, I had to leave.
I was really and truly happy, having learnt a great deal 
as well  tasting some French delights.

'Kurtoskalacs', the famous Hungarian chimney cake at Muscat Festival 2014


I'm enjoying Muscat Festival 2014 more than ever before and for those of you who are following my posts, I'm sure you all know that my sweet tooth is the reason for that. After savouring the Omani and French delicacies  on previous visits, we had the opportunity to try out the famous Hungarian Chimney cake on this one. 

Called 'Kurtoskalacs', the chimney cake, is a traditional Hungarian pastry that is wrapped around a wooden spool and slowly turned over an open fire. It is believed to have originated from Transylvania, but is  now celebrated as the oldest pastry in Hungary, and more often than not, makes for really great street  food. 





We had the opportunity to watch closely while the  pastry chef happily obliged. Not only did she tell us exactly how its made but gave us a great photo op as well.

Its really quite simple and like most pastries, the dough is coated with oil and sugar, and when baked it creates a crunchy, sugary outside crust, not unlike a hot pretzel, with a soft doughy inside.We had a choice of coatings and chose the walnut coating based on their recommendation.

Pastry Chef Mohammed Kessrrwani shows me how make a great French Mille-feuille

A couple of weeks ago, I wrote my first two blog posts on Paul, Muscat. With Eid rapidly approaching, I  decided to write my third and final post on Paul where Pastry Chef Mohammed Kessrwani shows me how to make the best  Mille-feuille and hope you enjoy reading this one as well.Even better, if you decide to try this out as your very own 'Eid Special.'

Paul is a French chain of bakeries and café restaurants established in 1889 in the city of Croix, in Northern France by Charlemagne Mayot. Today, there are over 500 franchised Paul bakery/café restaurants in many countries worldwide, viz.France, Spain, Belgium and the United Kingdom,  among others.This year Paul came to Muscat and has rapidly proved to be a very welcome addition to the range of restaurants present here.

Having a sweet tooth and being fond of baking myself, I'd specially asked to meet the Pastry Chef and that was how I found myself in the kitchens of Paul Muscat at 0730 hours and when I entered, was surprised to see Chef Mohammed Kessrwani already hard at work!

Welcoming me and making sure I was wearing a cap to cover my hair, he positioned me where I could watch him clearly and had no objections to being photographed at his work station. My first impression was,'Gosh he looks so young!" ! And that was proved to be right when I learnt that he was 29 and had been working in Pastry for the last 14 years.

I shadowed Chef Mohammed for two days and am delighted with all that I got to see and learn. On the second morning, I was invited by the Chef to watch an exclusive session on how to make a  great Mille-feuille and was then treated to a Demo of the vanilla strawberry version.

The mille-feuille ( "thousand leaves") vanilla custard slice, also known as the 'Napoleon' is a pastry of French origin. Traditionally, a mille-feuille is made up of three layers of puff  pastry(pâte feuilletée), alternating with two layers of pastry cream (crème pâtissière), but sometimes whipped cream or jam are substituted. The top pastry layer is dusted with  confectioner's sugar  and sometimes cocoa, or pulverized seeds (e.g. roasted almonds). Alternately, the top is glazed with icing or fondant in alternating white  (icing) and  brown  (chocolate)  stripes  and combed to get the effect of lines or striations.

Since Paul has strict standards, the basic pastry sheets for the Mille-feuille reach the Muscat restaurant as frozen sheets and every morning when he comes in, Chef Mohammed takes out the required quantity and thaws them till they are at the right temperature. After making the vanilla or as the case may be, the chocolate cream, he starts piping it, neatly but very firmly, around the outer edges and works his way inwards, till the entire sheet is neatly covered.

Working patiently, Chef Mohammed  covers the entire surface with the beautifully sliced fresh strawberries and then adds a light glaze to the finished product that goes a long way in adding to the appeal. Reminding me that we all eat with our eyes first, he pops the tray into the refrigerator for about 20 mins to give it a chance to set.

Exactly twenty minutes later, the alarm goes off and he gently takes the tray out and neatly slices the set pastry- a Vanilla Strawberry Mille-feuille into 24 portions and voila, a great new batch is ready!


Sometime later, the Mille-feuille make their way to the front of the shop where customers feast their eyes, before placing their orders for their goodies or best of all, sit down for coffee,  chat and a strawberry Mille-feuille with a friend!
